At EastView, we love great food!

EastView Terrace Dining RoomStep into the Terrace Dining Room and experience a truly memorable evening that starts with a warm welcome and smile from the host and ends after you’ve finished the last bite of a Panna Cotta with Blueberry Sauce and the last sip of smooth (never bitter!) Speeder & Earl’s® Coffee. Each installment of the four-course dinner is served by knowledgeable and friendly serving staff whose sole focus is to ensure your utmost satisfaction. Or join us for Sunday Brunch, where the atmosphere is relaxed and the choices are numerous. Bask in the warmth of the large fireplace by winter or relax by the windows with a view of the valley and the mountains of Hubbardton beyond.

Our MeadowSweet and GardenSong residents join us in either of the neighborhood dining rooms for three meals a day, with offerings as varied as Blueberry Pancakes to Egg Sandwiches for Breakfast, Sandwiches to Casseroles to various Hot Entrées for Lunch and full three-course meals for dinner.

The Bistro is open for Lunch Monday through Friday, offering Lunch options that are as light (or not) as you would like for you, your friends and your family.

EastView Dining Staff

The Dining department is headed up by our Director of Dining Services, Chef David Merrill, former executive chef for the upscale Basin Harbor Club for 19 years. Having enjoyed an extensive culinary career prior to that, he brings over 40 years of experience spanning the east coast from Maine to Florida, providing fine dining in resorts, hotels and clubs.

As a charter member of The Vermont Fresh Network, Chef Merrill is inspired by local foods and fresh flavors and driven by the desire to provide guests with the very best quality and nutrition for the most satisfying dining experience.

Every day sees the professional kitchen staff, with over 150 combined years of experience, preparing and cooking the foods that will be showcased on that day’s menu, using only fresh, raw ingredients, following Chef Merrill’s lead in the quest for the very best.

We are committed to providing guests with the freshest foods possible and that includes daily produce deliveries to ensure the freshest ingredients for the highest quality nutritional content and best flavor as well as the Kitchen Garden which provides fresh herbs and produce during the spring, summer and autumn months

EastView FreshWith just under 20% of our food sourced locally, we offer exceptional quality and flavor while supporting the local economy and reducing our carbon footprint. We are Healthy

Every meal features a Heart Healthy Entrée (based upon the American Heart Association guidelines), a Vegetarian Entrée and four different Vegetable options as well as a daily Fresh Fruit plate. The menus are designed to accommodate almost any dietary request, restriction or health challenge and we strive to achieve the highest levels of customer satisfaction including personalizing menus to accomplish that.

Every day brings something new with daily specials and seasonal menus supported by our always available menu, guaranteeing something for everyone! With our varied menus we bring you Steak night on Monday, Fish and Seafood specials every Wednesday and Friday and Italian night on Thursday. We travel the world with our ethnic dishes from Poland, Germany and Greece to Thailand, Vietnam, India and many more.
